最早出现于西汉时期。2015年11月在江西南昌新建区大塘坪乡西汉海昏侯墓出土了中国发现最早铜火锅。
火锅的起源至今尚无定论。但在东汉出现了“豓斗”，根据文献所考，这是一种陶或铜制的炊具，底部有三只脚，腹部有一握柄，用以放在火盆中以炭火温食，这和今天火锅吃法简直如出一辙，因此有人将此作为最早出现的铜火锅。
